Not sure what to do with that left over Bread? This is a classic Tuscan Salad featuring day old stale bread and heirloom tomatoes. Nothing goes to waste in Italy! Recipes may vary, this one is ours:
Cubed day old bread (hearty style like Ciabatta)
Heirloom Cherry Tomatoes (halved)
Sliced Red Onion
Grilled Summer Squash or Zucchini (about 1 1/2″ chop)
Salt and Pepper
Touch of Honey or Blue Agave
Add Seasonings according to your tastes, you can always add more but can’t take it away. This dish can be made ahead of time by adding all ingredients Except the Bread. Add the bread about an hour before serving, stirring frequently so the bread gets thoroughly coated.
