Rib Eye and Stout Chili w/ Pablano peppers and White Corn

  • 3 Pounds of Rib Eye (you can use just about any kind of beef you prefer although some tough cuts may take longer to tenderize)
  • 3 Pablano Peppers
  • 3 Jalapeno
  • 1 Large onion
  • 1 ½ cans Stewed Tomatoes (hand crushed)
  • 1 cup Dark Stout (Guinness)
  • 1 bag frozen White Corn
  • 1 16oz. can Black Beans
  • ½ Cup Brown Sugar
  • 2 Tablespoon Cocoa Powder or Bakers Chocolate
  • 2-Tablespoon Cumin
  • 1-Tablespoon Coriander
  • 1-Teaspoon Cayenne
  • Salt and Pepper

  1. Remove fat from beef and cut into about ½ inch cubes. Brown in sauce pot.
  2. Chop onion and peppers and cook with beef for about 3 minutes.
  3. Once beef is brown, add the stout and cook 1 minute.
  4. Add all remaining ingredients to the pot and salt and pepper to taste.
  5. Simmer for 2 hours or put into a crock pot for 6 hours.
  6. Chili is done when the beef is tender and chili is thick enough to stand a spoon up in it.
  7. *Make sure to check the seasoning about an hour before done – it may require a bit more seasoning to taste. If you like it HOT add more cayenne.

You can display shots of Stout with your chili for guests to pour over their chili bowl.

Serve with Tortilla Chips.
